Cedar Park Fire Department Demonstrates Safe & Unsafe Turkey Frying

The Cedar Park fire Department offered us some useful advice if you're considering using a deep fryer to cook your Thanksgiving turkey:
 
- Setup at least 10 feet from any structure.  That means not on your back porch, balcony or deck.
 
- Do not overfill.  To calculate how much oil you'll need, put the turkey in the pot and fill with water to two inches above the turkey.  Mark the waterline on the pot and remove the turkey and water, then refill to the mark with cooking oil.
 
- Do not overheat the oil.  Unattended cooking is one of the most common causes of house fires.  Overheated cooking oil could actually self-combust.
 
- Oil and water really don't mix.  Throwing water or a wet turkey on hot oil can cause the oil to splatter and ignite if the oil is hot enough.
