Tis The Season For Tamales

Monday morning Fred Cantu spoke with Eddie Bernal from Santa Rita Tex Mex Cantina about the tradition of making tamales at Christmas time. 

By some estimates, tamales date back 5,000 years to the Aztecs.  But today, families still enjoy gathering in the kitchen to make tamales.  It is labor-intensive which gives everyone plenty of time to catch up on what’s been going on since the last time they gathered to make tamales. 

The prep work includes making the masa and the fillings (pork and chicken are the most popular) and soaking the corn leaves which will hold everything together.  If you count the spices, some 40 ingredients go into the making of tamales. 

It’s much easier to order, but you need to give them lead time with large orders.  Tamales are typically ordered by the dozen.
